CARROT CAKE OVERNIGHT OATS (V)



Veggies for breakfast? Yes! Carrots have a naturally sweet taste and they are loaded with antioxidants and vitamin A. These wholesome oats are packed with nutrition and it’s delicious!


Ingredients

1/2 cup rolled oats 1/2 cup almond milk 1/4 cup Rugani 100% Carrot Juice 1 Tbsp maple syrup/honey (not vegan) 1 tsp cinnamon 1 Tbsp crushed pecans 1 Tbsp shredded coconut


Instructions


  1. Mix all ingredients (except for the pecans and coconut) in a bowl or mason jar.

  2. Add the pecans and coconut on top, cover with a lid, and set in the refrigerator overnight.

  3. Enjoy in the morning!
