I love sweet potato! Not only are they a rich source of fibre, they contain an array of vitamins and minerals including iron, calcium, selenium, B vitamins and vitamin C.
And this snacking Bread, inspired by Shut the Kale Up's recipe is one of my favorite things to do with this phenomenal root veggie.
Ingredients:
▪ 1 small roasted Sweet Potato (I get mine from Woolworths)
▪ 1 Banana (nice & spotty) ▪ 3 Organic pasture raised eggs (from your local farmer or farmers market) ▪ 1/3 C Almond Butter (Oh Mega Nut Butters is my personal favorite) ▪ 1/2 C Coconut Flour (from Credé)
▪ 1 tsp Baking Powder ▪ 2 Tsb Maple Syrup/Honey ▪ 1 Tsp Vanilla Bean Paste/Extract ▪ 1 Pinch of Himalayan Salt & Cinnamon
(Optional -Some Vegan Dark Chocolate Chips to sprinkle on top)
Method
Preheat Oven to 180c Celsius Mash up roasted sweet potato & banana. Add the nut butter, eggs, vanilla & maple syrup/honey & mix it up. Add the rest of the ingredients & stir until it forms a rough batter.
Add the batter to a lined Bread Pan and bake for about 45 min, add chocolate chips or a topping of your choice, be creative. And enjoy!
